Method
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix pumpkin puree and peanut butter until smooth.
- Gradually add rolled oats, stirring to form a dough.
- Roll dough into small balls or flatten with cookie cutters.
- Place on the baking sheet and bake for 20 minutes until golden.
- Let cool completely before serving.
