Ingredients

  • 1 cup oat flour
  • 1/2 cup unsweetened applesauce
  • 1/4 cup fresh or dried cranberries finely chopped
  • 2 tablespoons coconut oil
  • 1 egg
  • 1/4 teaspoon cinnamon optional

Method

  1. 1. Preheat your oven to 325°F and line a baking sheet with parchment paper.
  2. 2. Combine oat flour and cinnamon in a large mixing bowl.
  3. 3. In another bowl, whisk together applesauce, coconut oil, and egg until smooth.
  4. 4. Gradually mix wet ingredients into dry ingredients to form a firm dough.
  5. 5. Fold in chopped cranberries evenly.
  6. 6. Lightly flour your work surface and roll the dough to 1/4-inch thickness.
  7. 7. Cut the dough into strips approximately 5 inches long and 1/2 inch wide.
  8. 8. Place strips on the baking sheet and bake for 25-30 minutes until firm and golden brown.
  9. 9. Turn off the oven and allow the sticks to cool inside for 15 minutes for a crunchier texture.
  10. 10. Let the sticks cool completely before serving, then store in an airtight container.

Notes

Store in an airtight container at room temperature for up to a week or in the fridge for two weeks.
Freeze for longer storage; thaw before serving.
For a softer texture, reduce baking time by 5 minutes and skip the additional oven cooling.
