  • 1/2 cup cottage cheese
  • 1 scoop vanilla protein powder about 1/4 cup
  • 1/2 cup almond flour
  • 1/2 cup blueberries
  • 2 tablespoons honey or maple syrup
  • 1/2 teaspoon lemon zest
  • 1 teaspoon vanilla bean paste
  • 1 pinch salt

Method
 

  1. Add the cottage cheese to a blender or mini food processor and blend until completely smooth, about 30 seconds.
  2. Transfer the blended cottage cheese to a large mixing bowl and stir in the honey or maple syrup and vanilla bean paste until the mixture is creamy and glossy.
  3. Add the protein powder, almond flour, lemon zest, and salt. Stir with a spatula until a thick, dough-like mixture forms.
  4. Gently fold in the blueberries until evenly distributed, taking care not to crush them.
  5. Use a tablespoon or small cookie scoop to portion 1-inch balls of the mixture. Roll each portion between your hands to form smooth bites and place them on a parchment-lined plate or tray.
  6. Chill the bites in the refrigerator for at least 10 minutes, or until firm enough to handle. Keep refrigerated until ready to serve.

Notes

- If the mixture is too soft to roll, add 1 tablespoon extra almond flour at a time and stir until it holds together.
- If the mixture is too dry or crumbly, add a small splash of milk or water and stir until it becomes dough-like again.
- Store the bites in an airtight container in the refrigerator for 4 to 5 days.
- For longer storage, freeze the bites on a tray, then transfer to a container or freezer bag and thaw in the refrigerator before serving.
