Method
- Prepare silicone molds or a small shallow dish and set aside on a flat tray for easy transfer to the refrigerator.

- Slowly sprinkle the agar-agar powder over the warm mixture while whisking continuously to prevent lumps.
- Bring the mixture to a gentle simmer over medium-low heat and cook for 3 to 5 minutes, whisking often, until slightly thickened and the agar-agar is fully dissolved.
- Remove the saucepan from the heat and, if using, whisk in the honey until fully combined.
- Immediately pour the warm mixture into the prepared silicone molds or shallow dish, filling each cavity evenly.
- Gently tap the molds or dish on the counter to release any air bubbles and smooth the surface.
- Let the gummies cool at room temperature for 15 to 20 minutes, then transfer to the refrigerator.
- Chill for 1 to 2 hours, or until completely firm, then remove from the molds or cut into bite-size pieces if set in a dish.
- Store the gummies in an airtight container in the refrigerator and serve as a small occasional treat.
