Chewy French Toast Cookies: A Sweet Breakfast Twist

French toast cookies taste just like French toast sticks, but in the form of a deliciously chewy sugar cookie.

Ingredients
  

  • 1/2 cup butter
  • 1/3 cup sugar
  • 1/2 cup brown sugar
  • 1 large egg yolk
  • 1/2 cup light corn syrup
  • 2 teaspoons vanilla bean paste
  • 2 teaspoons maple extract
  • 2 1/3 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup sugar for rolling

Method
 

  1. 1. Preheat the oven to 350 degrees F and prepare 2 baking sheets with parchment paper or nonstick silicone baking pads.
  2. 2. Cream together the butter and sugars until fluffy.
  3. 3. Add the egg yolk, corn syrup, vanilla, and maple extracts; mix well and scrape down the sides of the bowl.
  4. 4. Combine the flour, cinnamon, nutmeg, baking soda, and salt in a separate bowl.
  5. 5. Gradually add the dry mixture to the wet mixture, blending thoroughly.
  6. 6. Roll the dough into 1.5-inch balls, then roll each ball in the remaining 1/4 cup sugar.
  7. 7. Place the cookies 2 inches apart on the prepared baking sheets.
  8. 8. Bake for 10-12 minutes until the edges are golden.
  9. 9. Remove from the oven and allow cookies to rest for 2 minutes before transferring to wire racks to cool completely.

Notes

Store in an airtight container to maintain chewiness.
Try dark brown sugar for a deeper flavor.
