Ingredients
  

  • 1 cup cooked chicken shredded (plain, skinless, boneless)
  • 1/2 cup cooked rice white or brown
  • 1 egg
  • 1/4 cup low-sodium chicken broth
  • 1 1/2 cups whole wheat flour
  • 1/4 cup oat flour or finely ground rolled oats
  • 1 tbsp fresh parsley finely chopped (optional)
  • 1 tbsp olive oil
  • Optional: 1 tbsp ground flaxseed or chia seeds
  • Optional: 1/4 tsp turmeric
  • Optional: 2 tbsp finely chopped carrots or peas

Method
 

  1. 1. Preheat oven to 350°F and line a baking sheet with parchment paper or a silicone mat.
  2. 2. In a mixing bowl, combine cooked chicken, rice, and egg. Mix well.
  3. 3. Add chicken broth and olive oil, stirring until wet but not soupy.
  4. 4. Gradually stir in whole wheat flour and oat flour until a firm dough forms.
  5. 5. Mix in optional ingredients if using.
  6. 6. Roll dough on a floured surface to 1/4 inch thickness and cut with bone-shaped cookie cutters.
  7. 7. Place shaped dough on prepared baking sheet.
  8. 8. Bake for 25–30 minutes, or until edges are golden brown. Let sit in oven 30 minutes for extra crunch.
  9. 9. Allow to cool completely before serving or storing.

Notes

Store treats in an airtight container at room temperature for 7 days, in the fridge for 3 weeks, or freeze for up to 3 months.
Adjust baking time for desired crunchiness.
Use chickpea flour for a grain-free alternative.
Use applesauce instead of olive oil for a low-fat version.
