Method
- Place the chicken breasts in a medium pot, cover with water by about 1 inch, and bring to a gentle simmer over medium heat.
- Reduce heat to low and simmer the chicken for 15 to 20 minutes, until cooked through and no longer pink in the center.
- Transfer the cooked chicken to a plate and let it cool slightly, then shred it into small bite size pieces with two forks.
- In a separate pot, combine the rice, chopped carrot, peas, and low sodium chicken broth or water.
- Bring the rice mixture to a simmer over medium heat, then reduce heat to low, cover, and cook for about 20 minutes, until the rice is tender and the vegetables are soft.
- Stir the shredded chicken into the pot with the rice and vegetables until evenly distributed.
- Remove the pot from the heat and let the mixture cool for 10 to 15 minutes until warm but not hot.
- Stir in the plain Greek yogurt until the mixture looks creamy and well combined.
- Sprinkle the chopped parsley over the mixture if using and stir again.
- Let the food cool to room temperature before serving appropriate portions to your dog.
