Ingredients

Ingredients
  • 2 boneless skinless chicken breasts
  • 1 cup white or brown rice rinsed
  • 1 large carrot finely chopped
  • 1/2 cup frozen peas
  • 2 cups low sodium chicken broth or water
  • 1/4 cup plain Greek yogurt unsweetened and unflavored
  • 1 tablespoon chopped fresh parsley optional

Method

  1. Place the chicken breasts in a medium pot, cover with water by about 1 inch, and bring to a gentle simmer over medium heat.
  2. Reduce heat to low and simmer the chicken for 15 to 20 minutes, until cooked through and no longer pink in the center.
  3. Transfer the cooked chicken to a plate and let it cool slightly, then shred it into small bite size pieces with two forks.
  4. In a separate pot, combine the rice, chopped carrot, peas, and low sodium chicken broth or water.
  5. Bring the rice mixture to a simmer over medium heat, then reduce heat to low, cover, and cook for about 20 minutes, until the rice is tender and the vegetables are soft.
  6. Stir the shredded chicken into the pot with the rice and vegetables until evenly distributed.
  7. Remove the pot from the heat and let the mixture cool for 10 to 15 minutes until warm but not hot.
  8. Stir in the plain Greek yogurt until the mixture looks creamy and well combined.
  9. Sprinkle the chopped parsley over the mixture if using and stir again.
  10. Let the food cool to room temperature before serving appropriate portions to your dog.
