Crunchy Apple & Zucchini Chew Sticks: A Tasty Twist!

Ingredients
  

  • 1 medium zucchini grated
  • 1 medium apple grated (core and seeds removed)
  • 1 ½ cups oat flour
  • ½ cup rolled oats
  • 1 egg
  • 2 tablespoons unsweetened applesauce
  • 1 tablespoon coconut oil melted
  • 1 tablespoon ground flaxseed optional
  • Pinch of cinnamon optional

Method
 

  1. 1. Preheat your oven to 325°F and line a baking sheet with parchment paper.
  2. 2. Wash and grate the zucchini and apple, then pat dry to remove excess moisture.
  3. 3. In a large mixing bowl, combine grated zucchini, apple, oat flour, rolled oats, egg, applesauce, ground flaxseed, melted coconut oil, and cinnamon.
  4. 4. Mix until evenly combined.
  5. 5. Roll out dough on a lightly floured surface to ½-inch thickness.
  6. 6. Cut dough into stick shapes or use cookie cutters for fun designs.
  7. 7. Place on the prepared baking sheet, leaving space between each.
  8. 8. Bake for 25-30 minutes, or until edges are golden brown. For extra crunch, bake for 5-10 minutes more.
  9. 9. Allow chew sticks to cool completely on a wire rack before serving.

Notes

For crunchier treats, bake longer; for softer treats, reduce baking time slightly.
Store in an airtight container at room temperature for up to 1 week, or refrigerate/freeze for longer.
Swap zucchini with carrots or sweet potatoes for variety.
