Method
- Place cubed butternut squash and diced carrots at the bottom of the slow cooker.
- Add chopped green beans and peas on top of the root vegetables.
- Distribute rinsed kidney beans evenly over the vegetables.
- Sprinkle uncooked brown rice over the bean layer.
- Crumble lean ground chicken over the rice layer, breaking into small chunks.
- Slowly pour water around the sides of the pot, soaking the layers.
- Set slow cooker to low and cook for 6-8 hours.
