Method
- 1. Preheat oven to 375°F and line mini muffin pan with paper liners.
- 2. Blend pumpkin, maple syrup, milk, coconut oil, and vanilla until smooth. Transfer to a mixing bowl.
- 3. Grind oats into a fine flour in a blender. Combine with baking powder and salt in a separate bowl.
- 4. Add pumpkin mixture to dry ingredients and whisk until combined.
- 5. Fill muffin cups two-thirds full with batter. Tap pan to smooth batter.
- 6. Bake for 12 to 15 minutes until golden. Cool before serving.
Notes
Use pure pumpkin, not pumpkin pie filling.
Optional: Top with freeze-dried raw cat food topper while warm.
