Ingredients
  

  • 1 cup gluten-free rolled oats
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 1/4 cup pure maple syrup
  • 2 tbsp + 2 tsp reduced-fat lactose-free milk
  • 2 tbsp + 2 tsp coconut oil
  • 1/4 tsp pure vanilla bean paste
  • 1/4 cup cooked pumpkin pure pumpkin, not pie purée

Method
 

  1. 1. Preheat oven to 375°F and line mini muffin pan with paper liners.
  2. 2. Blend pumpkin, maple syrup, milk, coconut oil, and vanilla until smooth. Transfer to a mixing bowl.
  3. 3. Grind oats into a fine flour in a blender. Combine with baking powder and salt in a separate bowl.
  4. 4. Add pumpkin mixture to dry ingredients and whisk until combined.
  5. 5. Fill muffin cups two-thirds full with batter. Tap pan to smooth batter.
  6. 6. Bake for 12 to 15 minutes until golden. Cool before serving.

Notes

Use pure pumpkin, not pumpkin pie filling.
Optional: Top with freeze-dried raw cat food topper while warm.
