  1. Preheat the oven to 250°F. Line a large baking sheet with parchment paper.
  2. Wash and scrub the sweet potatoes thoroughly under cool water and pat dry.
  3. Slice the sweet potatoes lengthwise into strips about 1/4 inch thick, keeping the slices as uniform as possible.
  4. Arrange the sweet potato slices in a single layer on the prepared baking sheet without overlapping.
  5. Bake for 3 hours, flipping each slice halfway through the baking time.
  6. Check that the chews feel dry on the surface and bendy-chewy in the center, then turn off the oven.
  7. Leave the chews in the turned-off oven with the door slightly ajar for 60 minutes to cool and dry further.
  8. Remove from the oven and let cool completely before serving or storing in an airtight container.
