- Preheat the oven to 250°F. Line a large baking sheet with parchment paper.
- Wash and scrub the sweet potatoes thoroughly under cool water and pat dry.
- Slice the sweet potatoes lengthwise into strips about 1/4 inch thick, keeping the slices as uniform as possible.
- Arrange the sweet potato slices in a single layer on the prepared baking sheet without overlapping.
- Bake for 3 hours, flipping each slice halfway through the baking time.
- Check that the chews feel dry on the surface and bendy-chewy in the center, then turn off the oven.
- Leave the chews in the turned-off oven with the door slightly ajar for 60 minutes to cool and dry further.
- Remove from the oven and let cool completely before serving or storing in an airtight container.
