Method
- Add the Greek yogurt to a medium mixing bowl and stir until smooth.
- Stir in the chopped fresh mint until evenly distributed.
- Slowly pour in the melted coconut oil while stirring to blend it smoothly into the cold yogurt.
- Add the honey, if using, and stir until the mixture is fully combined and speckled with mint.
- Place silicone stick molds or ice cube trays on a flat baking sheet.
- Spoon or pour the mixture into each cavity, filling nearly to the top without overflowing.
- Gently tap the molds or tray on the counter to release air bubbles and level the surface.
- Transfer the baking sheet with molds to the freezer and freeze for 6 hours, or until the treats are completely solid.
- Pop the frozen treats out of the molds and serve immediately or store in a freezer-safe container.

- Use only plain, unsweetened Greek yogurt that is free from xylitol and artificial sweeteners.
