- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Add the lean ground beef to a large bowl and break it up with a fork or clean hands.
- Add the grated carrots, chopped spinach, and cooled cooked white rice to the bowl and mix to distribute evenly.
- Add the egg, olive oil, and dried parsley, then mix with clean hands until the mixture is uniform and slightly sticky but holds together.
- Transfer the mixture to the prepared baking sheet and shape it into a firm, even log about 8–9 inches long, pressing out any air pockets.
- Place the baking sheet in the preheated oven and bake for 30 minutes, or until the roll is cooked through and no pink remains in the center.
- Remove the sausage roll from the oven and let it cool completely on a rack before slicing.
- Slice into rounds or smaller pieces and serve as a treat or mix a portion into your dog’s regular food.
