  • 1 cup fresh blueberries
  • 1 tablespoon lemon zest
  • 2 tablespoons honey
  • 1 cup almond flour
  • 1 teaspoon vanilla bean paste
  • 1 pinch salt
  • 1 tablespoon honey for drizzling
  • 1/2 cup fresh blueberries for topping

Method
 

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium mixing bowl, combine the cottage cheese, 1 cup blueberries, lemon zest, 2 tablespoons honey, almond flour, vanilla bean paste, and a pinch of salt.
  3. Gently fold the mixture together until well combined, keeping the blueberries as whole as possible.
  4. Scoop tablespoon-sized portions of the mixture and roll each into a ball with your hands.
  5. Arrange the balls on the prepared baking sheet, spacing them about 1 inch apart.
  6. Bake for 10 to 12 minutes, until the bites are slightly firm to the touch and lightly golden on the edges.
  7. Remove from the oven and let the bites cool on the baking sheet for 5 to 10 minutes.
  8. Drizzle the warm bites with the remaining 1 tablespoon honey and top with the extra 1/2 cup blueberries.
  9. Serve warm or refrigerate in an airtight container for up to 3 days.

Notes

- You can substitute Greek yogurt for cottage cheese for a smoother texture.
- Frozen blueberries can replace fresh; do not thaw before mixing to avoid excess moisture.
- If the mixture feels too loose to shape, add 1 to 2 tablespoons more almond flour until it resembles soft cookie dough.
- For a firmer, cheesecake-like texture, chill the baked bites for at least 30 minutes before serving.
