- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium mixing bowl, combine the cottage cheese, 1 cup blueberries, lemon zest, 2 tablespoons honey, almond flour, vanilla bean paste, and a pinch of salt.
- Gently fold the mixture together until well combined, keeping the blueberries as whole as possible.
- Scoop tablespoon-sized portions of the mixture and roll each into a ball with your hands.
- Arrange the balls on the prepared baking sheet, spacing them about 1 inch apart.
