- 1. Grate the zucchini and carrot, then squeeze out excess moisture from the zucchini using a clean kitchen towel.
- 2. In a bowl, mix the rolled oats, grated zucchini, carrot, and peas. Add the egg (or flaxseed egg) and applesauce, stirring until well combined.
- 3. Scoop about 1 tablespoon of the mixture and roll into a ball. Flatten gently to form a patty.
- 4. For pan-frying: Heat a non-stick skillet over medium heat, add coconut oil, and cook the fritters for 2-3 minutes on each side until golden brown. For baking: Preheat the oven to 375°F, place fritters on a parchment-lined baking sheet, and bake for 20 minutes, flipping halfway through.
- 5. Allow the fritters to cool completely before serving.
Notes
For senior dogs, add a splash of chicken broth to make the fritters softer.
Freeze in small batches for longer storage and easy portioning.
