Method
- Preheat the oven to 325°F and line a baking sheet with parchment paper.
- Finely chop the parsley and mint and place them in a large mixing bowl.
- Add the egg to the bowl and stir until the herbs are evenly coated and combined.
- Add the oat flour and coconut oil to the bowl and mix until combined.
- Pour in the water and stir until a firm, slightly tacky dough forms that holds together when pressed.
- Lightly flour a work surface with a little oat flour and transfer the dough onto it.
- Roll the dough to about 1/4 inch thickness using a rolling pin.
- Cut the dough into sticks or use small cookie cutters to make bite size shapes.
- Arrange the pieces on the prepared baking sheet, leaving a little space between each treat.
- Bake for 20 to 25 minutes, until the treats are firm and edges look slightly golden.
- Turn off the oven and, if you want extra crunchy treats, let them sit in the warm oven for 5 to 10 minutes.
- Remove the baking sheet and let the treats cool completely before serving or storing.
