- 1. Combine the water, sugar, yeast, and butter in a stand mixer bowl and mix until combined. Let sit for 5 minutes.
- 2. Add salt and flour, mix on low until combined, then knead on medium for 3-4 minutes until smooth.
- 3. Oil a bowl, place dough inside, cover, and let rise in a warm spot for 1 hour.
- 4. Preheat oven to 425°F.
- 5. Boil 3 quarts of water in a pan, add baking soda carefully.
- 6. Divide dough into 8 pieces, roll each into a rope, cut into 1-inch pieces.
- 7. Boil pretzel bites in batches for 30 seconds, remove with a slotted spoon.
- 8. Place bites on a greased baking sheet, brush with egg wash, sprinkle with salt.
- 9. Bake for 15-18 minutes until golden brown. Cool on a rack.
Notes
Be cautious when adding baking soda to boiling water—it can boil over.
For a sweet variation, use cinnamon and sugar instead of salt.
