Ingredients

  • 1 1/2 cups warm water
  • 2 tablespoons light brown sugar
  • 1 package active dry yeast 2 1/4 teaspoons
  • 3 ounces unsalted butter melted
  • 2 1/2 teaspoons kosher salt
  • 4 1/2 cups all-purpose flour
  • Vegetable oil
  • 3 quarts water
  • 1/3 cup baking soda
  • 1 whole egg beaten with 1 tablespoon cold water
  • Coarse sea salt

Method

  1. 1. Combine the water, sugar, yeast, and butter in a stand mixer bowl and mix until combined. Let sit for 5 minutes.
  2. 2. Add salt and flour, mix on low until combined, then knead on medium for 3-4 minutes until smooth.
  3. 3. Oil a bowl, place dough inside, cover, and let rise in a warm spot for 1 hour.
  4. 4. Preheat oven to 425°F.
  5. 5. Boil 3 quarts of water in a pan, add baking soda carefully.
  6. 6. Divide dough into 8 pieces, roll each into a rope, cut into 1-inch pieces.
  7. 7. Boil pretzel bites in batches for 30 seconds, remove with a slotted spoon.
  8. 8. Place bites on a greased baking sheet, brush with egg wash, sprinkle with salt.
  9. 9. Bake for 15-18 minutes until golden brown. Cool on a rack.

Notes

Be cautious when adding baking soda to boiling water—it can boil over.
For a sweet variation, use cinnamon and sugar instead of salt.
