Ingredients

  • 2 cups whole wheat flour or oat flour if gluten-free
  • 1/2 cup rolled oats
  • 1 large egg
  • 1/2 cup carrot purée
  • 1/2 cup spinach purée
  • 2 tbsp unsweetened applesauce or pumpkin purée
  • 1 tbsp olive oil or coconut oil
  • Optional: 1–2 tsp fresh parsley

Method

  1. 1. Preheat oven to 350°F (175°C). Line a baking tray with parchment paper.
  2. 2. In a mixing bowl, combine flour and oats.
  3. 3. In another bowl, whisk together egg, applesauce, and oil.
  4. 4. Divide mixture into two parts; mix one half with carrot purée, the other with spinach purée.
  5. 5. Roll out each dough on a floured surface. Stack and fold to create marbled layers, then roll flat to 1/4-inch thick.
  6. 6. Use a cookie cutter to shape treats. Place on lined tray.
  7. 7. Bake for 20–25 minutes until firm and lightly golden.
  8. 8. Let treats cool completely before serving.

Notes

Always use unsalted, unseasoned spinach and carrots.
If dough is too dry, add water or broth; if sticky, add more flour.
Substitute oat flour for wheat flour if gluten-sensitive.
