Ingredients
  

  • 3/4 cup sugar
  • 1/2 cup canola oil
  • 1 large egg
  • 1 tsp maple syrup or vanilla bean paste
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/3 cup flour gluten-free or regular all-purpose
  • 1/4 cup carob powder

Method
 

  1. 1. Preheat oven to 375°F (180°C). Line a baking sheet with parchment paper.
  2. 2. In a mixing bowl, combine oil, sugar, egg, and maple syrup. Blend until smooth.
  3. 3. Add flour, carob powder, baking soda, and salt. Mix to form a thick dough.
  4. 4. Form 2-3 tbsp of dough into balls. Place on the baking sheet and flatten slightly.
  5. 5. Bake for 8-10 minutes. Let cool for 2-3 minutes before transferring to a rack.

Notes

For gluten-free cookies, use a gluten-free flour blend.
Store in an airtight container for up to a week or freeze for 3 months.
