Method
- 1. Preheat oven to 375°F (180°C). Line a baking sheet with parchment paper.
- 2. In a mixing bowl, combine oil, sugar, egg, and maple syrup. Blend until smooth.
- 3. Add flour, carob powder, baking soda, and salt. Mix to form a thick dough.
- 4. Form 2-3 tbsp of dough into balls. Place on the baking sheet and flatten slightly.
- 5. Bake for 8-10 minutes. Let cool for 2-3 minutes before transferring to a rack.
Notes
For gluten-free cookies, use a gluten-free flour blend.
Store in an airtight container for up to a week or freeze for 3 months.
