Method
- 1. Preheat oven to 350°F (175°C). Grease a small cake pan or line with parchment paper.
- 2. In a medium bowl, combine mashed sweet potato, eggs, and applesauce. Mix until smooth.
- 3. Stir in oat flour and optional peanut butter and cinnamon until batter is thick and uniform.
- 4. Spoon batter into prepared cake pan and smooth the top.
- 5. Bake for 25–30 minutes until a toothpick comes out clean.
- 6. Cool in pan for 10–15 minutes, then transfer to wire rack to cool completely. Slice and serve.
Notes
Ensure peanut butter is xylitol-free.
Use unsweetened, plain ingredients.
