  • 1 cup cooked and mashed sweet potatoes
  • 2 large eggs
  • ¼ cup unsweetened applesauce
  • cups whole wheat flour plus more for rolling

Method
 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix the mashed sweet potato, eggs, and applesauce until well blended.
  3. Gradually stir in the flour. Knead the dough with your hands if necessary.
  4. Lightly flour your work surface. Roll out the dough to about ¼-inch thick.
  5. Use a cookie cutter to cut out treats and place them on the baking sheet.
  6. Bake for 35 to 40 minutes, until crisp and golden. Let cool before serving.
