Ingredients

  • 1 cup rolled oats
  • 1 medium zucchini grated
  • 1 medium carrot grated
  • 1/4 cup frozen peas optional
  • 1 egg or flaxseed egg for vegan option
  • 1/4 cup unsweetened applesauce
  • 1 tablespoon coconut oil for cooking or baking

Method

  1. 1. Grate the zucchini and carrot, then squeeze out excess moisture from the zucchini using a clean kitchen towel.
  2. 2. In a bowl, mix the rolled oats, grated zucchini, carrot, and peas. Add the egg (or flaxseed egg) and applesauce, stirring until well combined.
  3. 3. Scoop about 1 tablespoon of the mixture and roll into a ball. Flatten gently to form a patty. Repeat with the remaining mixture.
  4. 4. For pan-frying: Heat a non-stick skillet over medium heat, add coconut oil, and cook the fritters for 2-3 minutes on each side until golden brown. For baking: Preheat the oven to 375°F, place fritters on a parchment-lined baking sheet, and bake for 20 minutes, flipping halfway through.
  5. 5. Allow the fritters to cool completely before serving to your dog. Store leftovers in an airtight container in the fridge or freezer.
