Method
- 1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
- 2. Boil chopped carrots until fork-tender, about 5-10 minutes. Drain.
- 3. Blend boiled carrots, oats, and peanut butter in a food processor until a sticky dough forms.
- 4. Roll dough between two sheets of parchment to 1/2 inch thickness.
- 5. Cut into shapes with cookie cutters and place on baking sheet.
- 6. Bake for 35-40 minutes until firm and lightly browned. Cool completely.
Notes
Ensure peanut butter is xylitol-free.
For a drier dough, add more oats.
